You won't believe this is vegan and super easy to prepare!

Sushi did not use to be one of my favorite dishes, because I hated the inconveniences of eating fish, but this vegan recipe is amazing!

If there is something I don't miss from when I used to eat meat, It must surely be sushi. Even before I became a vegetarian I hated fish, its thorns, and the thought of eating something with eyes. But when I gave this recipe a try, it changed my mind completely!

  1. Preheat the oven to 180°F.
  2. Slice the watermelon as filets and rub each piece with olive oil and sea salt.
  3. Place the watermelon on a baking sheet and cook for about 1 hour, flip the pieces and cook for one additional hour. When the pieces are soft, they are a perfect substitute for tuna or salmon!
