Green papaya salad is a popular Thai dish that is believed to have originated from a similar dish from Laos. This recipe is inspired by the Thai version, but it is totally plant-based.

Method:

 Green papaya salad is a popular Thai dish that is believed to have originated from a similar dish from Laos. 
  1. Use a mandoline to shred the carrots into small strips, or shred them if you prefer so.
  2. Peel the papaya and scoop out the seeds, then cut them into small strips using a mandoline.
  3. Chop the cabbage into bite-sized pieces.
  4. Cut the tomatoes into cubes and mix all the vegetables in a large bowl.
  5. To prepare the sauce simply mix the lime juice, olive oil, and the minced garlic, at this point you can if you wish, use some salt, I prefer not to.
  6. Combine the sauce with the veggies, and you are ready to enjoy your salad!
