Caesar salad has always been one of my favorites, toss some greens, some plant-based nuggets, croutons, and dressing and you are ready to eat!

Let's face it, dressing makes a big difference when you are trying to get your 10-a-day veggies, it adds flavor and texture to your meals. My nutritionist always told me to go easy on the seasonings and dressings because they are usually calorie and chemical-packed, but here is the trick, if you make them at home, you can do without all the preservatives and excess calories and keep the flavor instead. This recipe is totally vegan, low in calories, and super versatile.

You can store this dressing for up to 10 days in your refrigerator, but I doubt it will make it as far as that, when I prepare this recipe, it hardly makes it to a weekend!
