Method:

No time to cook? Don’t worry, this recipe only needs 10 minutes of prep time and it is super nutritious and tasty.
  1. Let the dried shiitakes hydrate in them both and bring them to a boil, cover and remove from the heat.
  2. Meanwhile, heat some vegetable oil in a pan and add the onion until it’s transparent, add the ginger and garlic and cook for a minute.
  3. Remove the shiitakes from the broth and process them until you get a smooth paste and add, the tamari, onion, garlic, and ginger to the broth.
  4. Boil the eggs for 7 minutes and peel them.
  5. Cook the noodles and the spinach for a minute.
  6. In a pan sautee the noodles and the fresh shitakes.
  7. Divide the pasta into four bowls, cut each egg in a half and place 2 halves in each bowl, arrange a pile of shiitakes and spinach and add the broth.
  8. Enjoy!
