The best thing about salads is that if we change the dressing, we will have a different taste even if the vegetables used are the same.
And the good thing about the dressings is that we can be very creative when it comes to making them. The options are unlimited: sweet, salty, spicy, bittersweet, you name it. We love switching things up a bit with different dressings and we may have found the most perfect spicy salad dressing. Full of nutrients, this dressing has it all: the creaminess (and healthy fats) of avocado, the spicy touch of jalapeño peppers, and the vitamin C of tomatoes. Give it a try!
- 6 cherry tomatoes
- 1 large avocado
- 2 jalapeños (as many as you like)
- 2 onion
- 1 clove of fresh garlic
- a pinch of chopped cilantro
- 1 tbsp of lemon juice
- salt and pepper
In a small saucepan, bring water to a boil. Add the cherry tomatoes and the jalapeños. Let them cook for 10 to 12 minutes. Then drain and reserve a little water after draining the ingredients.
In a blender, add the cooked peeled tomatoes, avocado, jalapeños, onion, garlic, coriander, and a pinch of salt and pepper. Blend until smooth, and add some of the reserved water if needed and a little lemon juice. That's it! Perfect for a sandwich, salad or even pasta.
