Simple one-pan dinner? Check this nutritious and simple roasted vegetables

Ingredients 

Note: you can use vegan parmesan and 1tbsp of sugar instead of honey, to make it vegan friendly.

Preparation

  1. Preheat the oven to 180°C. 
  2. Chop the pumpkin and carrots into small wedges. 
  3. Mix it all in a baking tray with olive oil.
  4. Add the baking tray to the oven and roast for 35-40 minutes, until golden and caramelized.
  5. For the dressing, combine hummus, mustard, vinegar, and honey in a small jar. Whisk until combined.
  6. Remove roasted vegetables from the oven and add chickpeas to the tray.
  7. Drizzle over dressing and top with pumpkin seeds, chili flakes, and mint leaves. You can add parmesan cheese to taste.
