- 1 ½ tbs tahini
- 1 ½ tbs lemon juice
- 1 ½ tbs water
- 1 can chunk tuna in water, drained
- 1/4 can olives, pitted and chopped
- 2 tbsp parsley
- 2 cups baby spinach, rinsed
- a handful of walnuts
Whisk tahini, lemon juice, and water together in a small bowl. Add tuna, olives, walnuts, and parsley; stir to combine. Serve the tuna salad over 2 cups spinach.
