Not only are sweet potatoes super nutritious and delicious, but they are also super versatile. Here is how to turn a sweet potato into 4 different meals.
If you are craving some carbs, but you still want to include lots of vitamins and minerals, sweet potatoes should be your meal of choice: they are loaded with vitamins A, B and C, copper potassium and fiber as well.
1. Baked sweet potatoes
Just slice a purple sweet potato in half and bake it for 40 minutes, add some nut butter and pomegranate seeds when it’s cooked and you’ve got the perfect treat!
2. Sweet potato chips
Slice a sweet potato into chips about an inch thick, make sure you coat all of them with olive oil, add some rosemary and thyme and if you want to add some salt –I prefer not to add any salt as they are already delicious. Let them roast for 40 minutes until crisp and serve with hummus or any other dip you prefer!
3. Mashed Purple Sweet potato
Poke a hole in the sweet potato and bake for about an hour, scrape the content into a bowl, add a tablespoon of ghee, mash it together, and then add some Greek yogurt for a dash of freshness!
4. Stuffed sweet potato
Bake a sweet potato for 40 minutes, at the same time, dice and onion and saute until they are caramelized, add a quarter cup of black beans and mix. When the sweet potato is already baked, slice it in half and stuff it with the mixture, sprinkle some paprika and grated cheese and let it crust in the oven!
