We all like desserts. But sometimes we don't eat them because we feel like we're falling off the wagon. This flourless and gluten-free dessert is an excellent solution for anyone who wants to indulge in a healthier dessert.
- 6 egg yolks
- 1 egg
- 150 grams of powdered sugar
- Juice and zest of half a lemon
- 170 grams of sugar
- 300 grams of ground walnuts
- 50 grams of polenta
- 6 egg whites
- 1 tablespoon rum
Beat the yolks with the egg whites and the powdered sugar. Add the juice, the lemon zest, the ground walnuts, and the polenta moistened with the rum.
On the other hand, beat the whites with the sugar. Mix both shakes with enveloping movements and put it in a round cake mold previously oiled and covered with cornstarch.
Take it to the oven (moderate temperature) for approximately 40 minutes. Once it is removed and cold, cover the cake with cream and decorate it with walnuts on top.
