Easy and delicious eggplant and tomato vegan snack

A fantastic appetizer or side Italian snack!

The combination of eggplant, tomatoes, and basil is a naturally good choice, a combination that Italian cuisine praises for its mix of flavors.

Preparation

  1. Preheat the oven to 220º C.
  2. Spray a baking sheet with olive oil. Slice the eggplants, arrange them in a single layer, sprinkle with salt and freshly ground pepper.
  3. Bake for 15-20 minutes. Carefully flip each slice, sprinkle with salt and add freshly ground pepper and bake 10 to 12 minutes.
  4. Mix tofu, water, oil, and lemon and beat everything well (or use a blender) until a smooth and creamy.
  5. Meanwhile, cut the tomato into slices.
  6. When the eggplant is ready, place the slices on a serving dish. Top with a slice of tomato, onions, capers, tofu sauce, and basil.
