We have previously talked about one of Natalie's favourite meals: leeks and homemade croutons. But this salad was too good not to share.
Natalie Portman has been posting her favourite recipes on her Instagram account for a while now. Plant-based and easy to make, they are too good not to try. This beet and potato salad is one of her favourites and we can see why. Full of fibre, it will keep you full for longer and the super-nutritious beets are full of vitamins and antioxidants.
The Academy Award winner also shared a fun fact about beets. While making Leon, the makeup artist used beet juice as lipstick and blush as Natalie was only 11.
- 1 cup of chopped beets
- 1 cup of potatoes
- 1 tbsp of mustard
- 1-3 tbsp of gherkins
- red wine
1. Boil 1 cup of beets and 1 cup russet potatoes in two separate pans; remove when tender.
2. Slice boiled potatoes and beets into cubes and then mix together in a bowl.
3. For the dressing, mix together 1 tbsp of whole-grain mustard, 1-3 tbsps of sliced cornichons (gherkin pickles), finely chopped shallots, and a splash of red wine vinegar and olive oil. Mix into a jar and add to beet and potato salad bowl.
