1. Quick and easy!
1. In a food processor, process the nuts, dates and coconut until you get a dough-like mixture. Divide the dough into two equal parts, and place one of the parts at the bottom of a previously greased mould or cake tin. Press with your hands until it covers the entire mould. In another mould of the same size, place the other half of the dough and place both parts the freezer.
2. Process cashews, lemon juice, syrup, coconut oil and vanilla in a food processor until obtaining a smooth cream. Divide the filling into 2 equal parts.
3. Wash the strawberries and divide them into two equal parts. Chop half of the strawberries into small pieces and mix with half of the filling. Then top one of the bases and place into a freezer.
4. Blend the other half of the strawberries with the rest of the filling until you get a cream-like texture. Top the second base and then layer on the first. Place back into the freezer for a coupe of hours.
Take the cake out of the freezer 15 minutes before consuming and garnish with the remaining strawberries. Cut it with a knife dipped in hot water so that it does not break down.
