In a pot with boiling water cook the chopped onion and garlic together with the potato cut into slices until tender.
When they are ready, drain and put the onion, garlic, and potato in a food processor along with the cream cheese, oil, and milk that is considered necessary to obtain the desired consistency.
Place the mixture in a pot over low heat, stirring constantly until obtaining a consistency that is neither too thick nor too liquid, if necessary, add a little more milk.
Serve the hot fondue, along with vegetables, toast, nachos, or toasted pita bread.
