1. Preparing the tofu to make our cheese
Press the tofu, wrapping it in a kitchen towel, and put some weight on it like some tetra brick with a board or a heavy book, and let it drain for at least 30 minutes.
Once ready, dice the tofu.
2. Marinate to obtain our feta cheese
To prepare the dressing, you will need a bowl with a lid. Mix lemon juice with water, vinegar, and oregano. Then add the tofu cubes, and leave to marinate in the fridge for at least 3 hours, although the recommended to leave it for up to 2 to 3 days so that it has more flavor.
Take the tofu out of the fridge and strain the portion you need, leaving the rest to marinade.
