1. Step by step chorizo preparation
Boil the rice, strain and set aside.
In a bowl, place the gluten with the rest of the dry ingredients (except the boiled rice). When it is well mixed, add the rice and mix again.
Then mix the liquids in another bowl: the vegetable stock, the wine and the soy sauce. Then add to the mixture of dry ingredients, mix with a fork until obtaining a uniform mass. If you notice the dough is very dry, add a little water or broth.
Place cling film on a clean and smooth surface and place the dough in the shape of a sausage, roll up and tie with twine on one side. Press to that side, shaping the sausage and giving it the necessary consistency. It is important that the sausages are well pressed so that they do not break when cut. Close on the other side with the twine.
