This is an alternative to enmoladas for those of us who don't eat meat. Although for some the combination of mole and banana is extreme, the result is delightful. If you haven't tried them, now is the time to do it. Recipe here.

1. To make the mole
In a deep skillet, toast the chiles lightly, along with the onion and garlic over medium-high heat.
Separately, toast the sesame seeds in a small skillet over medium heat.
In a saucepan, bring water to a boil, and place the chilies and boil gently for 10 minutes, then strain and reserve.
When they have cooled down a bit, place the chilies in a processor and blend them with the sesame seeds, onion, garlic, cinnamon, bay leaf, and 1 cup of vegetable stock until completely crushed.
Then add the chocolate, the mole paste, peanut butter, and 2 cups of vegetable broth and liquefy until the mixture has the consistency of a mole, strain the preparation to remove any residue and add in a large pot, add 1 or 2 cups of vegetable broth to adjust the consistency and boil for 7 minutes, rectify the seasoning with salt and pepper.

2. To make the mashed male bananas
Bring water to a boil in a small saucepan, add the peeled and chopped banana and let it boil for 20 minutes or until the banana is tender. Remove the banana slices from the water and using a fork to mash them until they are pureed.
Heat a tablespoon of oil in a large skillet over medium heat add the garlic and cook for 1 minute, then add the cooked banana and stir with the garlic. Gradually add 1 cup of vegetable stock to the pan while stirring the mixture with a wooden spoon. Add enough liquid so that they are the consistency of mashed potatoes. Season the puree and remove it from the heat.
To assemble the molds, wrap the tortillas in a damp paper towel and microwave for 1 minute or until the tortillas are flexible enough to fold.
Fill each of the tortillas with 2 tablespoons of puree and fold them in half. Put a tablespoon of a mole in the bottom of the dishes where they are going to be served, place 4 filled tortillas on each plate and bathe them with the mole.
You can sprinkle sesame on top of the enmoladas as decoration.
