This Swiss chard wrap is a perfect summer alternative. Gluten-free and full of vitamins and minerals, it's an original way to sneak in some extra leafy greens into your diet.

1. Steam the Swiss chard leaves for a couple of minutes, without letting them lose their texture and leave to cool.
2. Finely chop the onion and tomato and dice the carrot and cucumber into matchsticks.
3. Top the chard leaves with rice, quinoa, and the previously chopped vegetables, and roll just as you would a spring rool or a burrito.
4. Make a dressing for your wrap by mixing olive oil, salt and pepper to taste. To finish, add a squeaze of lemon juice, and herbs of choice.
