These rice paper rolls are very easy to prepare, and work perfectly as a lunch, snack and even dinner at home. You can stuff them with the vegetables you have at hand, and add different sources of vegetable protein such as hummus, tofu or seed-based creams.
In addition to beets, this recipe contains many healthy and beneficial ingredients. For example, the rice paper where our rolls will be wrapped does not contain gluten, so it is a suitable option for celiacs.

1. Chop the veggies
The first thing you should do is cut your vegetables.
Meanwhile in a large bowl, add warm water, to soak the rice paper sheets, so that they become manageable.

2. Making the rolls
Put the rice leaves on a cutting board (but make sure it is wet, since your rice paper can stick to the table if it does not have water)
Add the green leaves and place a few tablespoons of beet hummus on top.
Add some grated beets (you can also use cucumber, carrots and avocado, they are excellent options for this dish).
Roll from front to back, once you've reached the middle, fold the ends inward and continue rolling, cut in half, and serve.
