1. Prepare the filling
Cook the rice as per package instructions.
Rinse and cook the beans on a pan or microwave.
Chop the tomatoes and slice the avocados.
Heat the cup of rice, beans, and enchilada sauce over low heat in a wok, check salt and add more if necessary. While ready, heat the tortillas.
2. Make the burrito
Top the tortillas with the bean and rice mixture, add greens, tomatoes and avocado.
Wrap like a burrito, first, folding a little on two sides and then rolling the remaining side.
