Preheat the oven to 220º C.
Spray a baking sheet with olive oil. Slice the eggplants, arrange them in a single layer, sprinkle with salt and freshly ground pepper.
Bake for 15-20 minutes. Carefully flip each slice, sprinkle with salt and add freshly ground pepper and bake 10 to 12 minutes.
Mix tofu, water, oil, and lemon and beat everything well (or use a blender) until a smooth and creamy.
Meanwhile, cut the tomato into slices.
When the eggplant is ready, place the slices on a serving dish. Top with a slice of tomato, onions, capers, tofu sauce, and basil.
