1. Melon mousse step by step
In a bowl or large glass, introduce the melon pulp, sugar and cinnamon.
Meanwhile, place 2 tablespoons of aquafaba in a bowl with the milk and beat until creamy. At first, there will be a lot of liquid, continue whisking and it will reach the consistency of whipped cream.
In a processor, place the melon pulp and blend until you get a puree. Add the aquafaba cream little by little.
Whisk the remaining 3 tablespoons of aquafaba until it has the consistency of meringue and add tablespoon by tablespoon to the melon cream. Beat well and distribute in individual glasses, topping each one with a mint leaf.
