You can use any alternative milk. And if you want to make it less caloric, use 4 tbsp of sugar instead of 1/4 cup.
1. For the Caramel:
Place 3 tbsp of brown sugar + 1tbsp of water in a non-stick frying pan at low temperature. Do not stir too much. Just enough so it doesn't burn. Remove from the heat when you see the characteristic caramel color and place it in the mold for flan or just any non-stick mold.
2. For the pudding:
Beat the eggs with the rest of the sugar, add the milk along with the vanilla extract and the grated coconut and continue to stir gently until the ingredients are well incorporated.
Place the mixture in the same mold that has the caramel and place the mold in a pan with hot water to cook using a bain-marie.
Place into a pre-heated oven at 180º C (356º F) for 40-45 minutes.
To see if it is done, check with a toothpick. It will come out wet but without sticky bits.
