These corn popsicles are easy to make and are a perfect snack for hot days. I used almond milk to make them but if you want a more decadent palette you can use coconut milk.

Place the corn, almond milk and sugar in a large pot, turn the pot on medium heat and let the milk heat until it is about to boil. Turn off the heat and remove the pot from the stove, let the mixture cool to room temperature.
Blend the mixture very well and you can strain it or not according to your preference.
Pour the mixture into the popsicle molds and freeze for 5 hours.
