Coca de trampo is a typical food of the Balearic Islands and especially of Majorca, it consists of flat and square bread dough, with vegetables cut into pieces. It has tomato, green, red and onion peppers. All this seasoned with oil, vinegar and salt
The coca mass has a simple preparation and its proving time is very short, it is made with flour, water, oil, yeast and salt.
While the trampo is a harmonious mixture of tomato, green pepper, red pepper, onion, oil and salt. Its name comes from the Majorcan term trempar, which means seasoning, dressing and constitutes a fresh salad that can accompany any dish.

1. Make the coca
Dissolve the yeast in the warm water, while in a large bowl, place the flour and salt, add the water with the yeast and the two types of oil. Mix until all the ingredients are integrated and form a dough.
Let the dough rest in the bowl covered with a cloth while you prepare the trampo.

2. Make the trampo
Clean the peppers and tomatoes and peel the onion, chop the vegetables into small squares, about half a centimeter. Dress with a little salt, the paprika, the white pepper and the oil. Reservation.
Grease a tray with a little oil. Place the coca mass in the middle and spread it with your fingers, trying to make it as level as possible. Let stand 20 minutes.
After the resting time, spread the vegetables over the dough.
Finally, bake the coca at 200ºC / 392 ºF for 20 minutes.
