This sweet and sour tofu is the vegetable version of the popular sweet and sour pork from Chinese restaurants, the difference is that it is healthier and has less fat.

1. For the sweet and sour tofu
Mix the tamari or soy sauce and the apple cider vinegar in a bowl and set aside.
Marinate the tofu cubes in the mixture for at least 5 minutes.
Strain the tofu and fry it in the cornstarch until completely covered.
Cook the tofu in a frying pan with very little oil until golden brown on all sides and reserve
Chop the vegetables with large cuts and cook in the pan with a little oil over medium-high heat until golden and reserve.

2. For the sweet and sour sauce
To make the sweet and sour sauce, put the sugar, ketchup, vinegar, and tamari or soy sauce in a saucepan and stir add the cornstarch diluted in the water and stir again, cook over medium-high heat until the sauce thickens, stirring occasionally.
Mix the tofu, vegetables, and sauce in the pan, stir and cook for about 5 minutes over medium heat so that the flavors are integrated. Serve with a little sesame on top and it will look like an oriental dish.
