The classic hummus is made only with chickpeas and is delicious, but with this version in addition to a great color, the sweetness of beetroot will give it a healthy twist.
This recipe has the particularity of cooking the beets in the oven. Roasting beets will not only result in better texture but also intensify the flavor. Roasting also allows keeping more nutrients compared to boiling.

1. Make the beets hummus
Clean the beets and separate the leaves from the root. Then wrap in aluminum foil. Bake until soft.
In a food processor, place the cooked beets, the previously cooked chickpeas, lemon juice, garlic, tahini, salt and the olive oil, and process until obtaining a homogeneous, smooth texture.
This hummus can be accompanied by raw or baked vegetables, with pita bread or you can use it in other recipes.
