There is an endless number of soups and cream soups. Today we present to you the Thai Coconut Soup you can make with only 2 or 3 ingredients. It can be made in under 30 minutes and all you need is a pot and a blender. We include some optional add-on ingredients for you to use if you fancy.

If using our optional ingredients, quickly stir fry them in a little bit of oil or water and add to the soup before blending.

Chop the main ingredients and cook in broth or stock until done. Season to taste and blend, adding more stock if necessary.
Optional: Top with coriander leaves, mint, and lime juice.
