These Pancakes are not only healthy but they are super easy and quick to make. You only need 2 ingredients. You can eat them alone or top them with fruits, grated coconut, nuts, honey (or all of these together) for a super energetic breakfast.

Mash a banana in a bowl (the riper it is, the sweeter the flavor).
Add 1 egg and the vanilla extract and beat with a fork.
Heat a frying pan with a little coconut oil. Using a spoon, scoop the batter onto the pan. Brown on both sides and you're done!
